Grilled Vegetables with a Rhubarb and Mango Salsa

This is for all of you Vegans out there or the people who just want to eat a delicious healthy meal. With Rhubarb season upon us this creative dish is sure to be a crowd pleaser at any family function or your dinner table. There is a medley of vegetables and a few fruits to satisfy your taste buds. For the salsa, you will need mango, lime, jalapeno peppers, bell pepper, onion, A little Basil, Cilantro, coriander, sweet syrup and of course that delicious Rhubarb. On the grill, you will have your zucchini, sweet potato, cherry tomato’s, bell pepper and eggplant. Eat well and enjoy!
