Healthy Carrot-Ginger Soup Bursting with Spring Flavors

This fresh, creamy carrot and ginger soup is a simple, flavorful springtime favorite. It’s dairy-free, vegan, and 100% delicious, so it’s perfect for all your family and guests.

Chopped fresh ginger combines with chunks of carrot and coconut milk to create this velvety, delightful soup. Even better: you can make it on the stovetop or in your Instant Pot!

 

INGREDIENTS

  • 1 tablespoon coconut oil
  • 1 medium yellow onion, chopped
  • 1 clove garlic, minced
  • 3 tablespoons fresh ginger, chopped (more or less to taste)
  • 1 pound carrots, peeled and chopped (baby carrots are fine)
  • 32 ounces vegetable stock
  • 1 14-ounce can of coconut cream or coconut milk
  • ½ teaspoon of salt, plus more to taste

 

MAKING THE SOUP

Bring a large skillet to medium-high heat. Melt the coconut oil. Add onion, garlic and ginger. Cook until fragrant and onion is nearly translucent, about 5 minutes.

Add carrots and vegetable stock. Bring to a boil.

Reduce heat to simmer. Cook until carrots are soft, about 25 minutes. Gradually stir in coconut cream or milk.

With an immersion blender, blend soup until smooth. You can also use a standard blender (it’s easiest if you blend the soup in small batches). Add salt to taste. Serve hot with crusty bread or as a delicious side for your brunch, lunch or dinner menu.

 

HOW TO MAKE THE SOUP IN AN INSTANT POT

Select the “Sauté” function on your Instant Pot. Once it’s hot, add oil and onion. Let sauté for 2-3 minutes; then add garlic and ginger and sauté for another 2 minutes.

Hit “Cancel” on your Instant Pot. Add carrots and broth. Secure the lid. Now select the “Manual” function, and cook on high pressure for 6 minutes.

Select “Quick Release”. Stir in coconut milk and salt (add more salt to taste if needed).

Use a blender or immersion blender, blend until creamy. Serve hot!

 

RECIPE NOTE

This soup is a ginger-lover’s delight. You can add up to 4 tablespoons ginger if you enjoy its fresh, pungent flavor. Cut back to 1 or ½ tablespoon if you prefer a subtler note of ginger.
