What To Do With Thanksgiving Leftovers

Thanksgiving is finally over. Your hours spent cooking and cleaning are finally done, but now your fridge is filled with all these leftovers. So, to help rid your fridge of all these containers of food, we have a few creative ideas of dishes you can make with this year’s Thanksgiving leftovers.

Turkey Tacos with Butternut Squash Pico de Gallo

Sauté the squash, mix it with some pomegranate seeds, cilantro, shallot, garlic and lots of lime juice. It will be soft and sweet and nutty. Topped on turkey, in a tortilla with hot sauce makes for the perfect leftover turkey day situation.

Leftover Turkey Skillet Shepherd’s Pie

Here’s a great way to repurpose all that turkey, gravy, and mashed potatoes. This turkey shepherd’s pie is a one-skillet dish that’s easy to make and guaranteed to be gobbled up.

Spiced Cranberry Sangria

This recipe starts off with cranberries simmered in orange juice, water, ginger, sugar and a cinnamon stick. None of these flavors overwhelm the cranberry syrup—they just add hints.

Leftover cranberries add a vitamin C and antioxidant boost to morning smoothies. Cranberries are one of the most antioxidant-packed berries around.

Turkey Avocado Burrito

Turkey is leaner than beet, so Thanksgiving leftovers make one heck of a breakfast with some strong coffee and extra avocado on the side.

Leftover roasted turkey is chopped and pulled and mixed with creamy mayonnaise and Dijon mustard then wrapped up in a whole-wheat wrap with a healthy smear of cranberry sauce.
