Birthday Bombshell: Make This Easy Ice Cream Bombe Cake
Everyone loves birthday cake. But your party guests will be blown away when they taste this birthday masterpiece made from layers and layers of delicious ice cream.
Anything this fabulous must be super tricky to make, right? Actually, this frosty “bombe” – shaped like a cannonball, hence its French name – is easy to put together in a large round bowl. Because each layer needs to freeze for 2 hours and the finished bombe needs 8 hours more, it’s definitely a make-ahead recipe, but well worth the planning.
Customize your cake with the birthday boy or girl’s favorite flavors of premium ice cream. (We’ve chosen flavors that give the bombe a rainbow effect when sliced.)
- 6 c. strawberry ice cream
- 5 c. chocolate-chip ice cream
- 4 c. pistachio ice cream
- 2 c. dark chocolate ice cream
- Fancy sprinkles to coat
Line a 3-quart metal mixing bowl with plastic wrap, leaving a 2-inch overhang all around the edges. Freeze the bowl for 10 minutes.
Mash 5 to 6 cups of the strawberry ice cream until just spreadable. Using a rubber spatula, coat the inside of the prepared bowl with the softened ice cream, making a thick, even layer. Freeze 2 hours.
Repeat the procedure with 4 to 5 cups chocolate-chip ice cream and again with 3 to 4 cups pistachio ice cream, freezing for 2 hours between each layer. Fill remaining space with 2 cups dark chocolate ice cream. Cover with plastic wrap and freeze until completely hardened, at least 8 hours.
To serve, invert bowl onto a flat serving plate. Remove bowl and plastic wrap. Press sprinkles evenly over surface. Return to freezer or serve immediately. Sparkler candles give this bombshell birthday surprise the perfect finishing touch.
PRO TIP: To cut an ice cream cake with ease, run a chef’s knife under warm water for one minute. Moisten a terry dishtowel with warm water and keep it at your side while slicing. Cut into the cake with the warmed knife, wiping with the heated towel between each slice.
