Forget Avocado—Potato + Crispy Onions Is Our Latest Toast Obsession

Here is an idea for a vegetarian snack or light meal that was inspired by the kind of open-faced sandwich. We may have gotten used to spreading things on our toast such as mashed avocado, but this is another take that is also vegetarian. It is composed of cream sauce and then a potato that has been boiled. Topping that with an onion that is raw or pickled and then some onion that has been fried for texture. Flavorful herbs to garnish it.
