Great Labor Day Recipes for Perfect Late Summer Parties

It’s almost time to say goodbye to summer – but not before we have a few more weekend get-togethers to celebrate the best season of the year! Try out these recipes for a summer-into-fall spread your friends and family will love.

PICKLE DOGS

 

  • 3 oz. cream cheese, softened
  • 1/2 c. shredded cheddar cheese
  • 2 tbsp. chopped chives
  • Kosher salt
  • Freshly ground black pepper
  • 1 tbsp. vegetable oil
  • 5 hot dogs
  • 5 large pickles
  • Mustard, for drizzling
  • Ketchup, for drizzling

 

In a medium bowl, combine cream cheese, cheddar, and chives. Season with salt and pepper and stir until combined. Set aside.

 

In a large skillet or grill pan over medium heat, heat oil. Add hot dogs and cook until slightly charred, about 4 minutes per side.

 

Slice pickles lengthwise almost completely in half, leaving a small portion attached, like a hot dog bun.

 

Inside each pickle, spread cream cheese mixture, add a hot dog, and drizzle with mustard.

 

GRILLED RANCH POTATOES

 

  • 2 lb. baby potatoes, halved
  • 1/4 tbsp. extra-virgin olive oil
  • Juice of 1/2 a lemon
  • 1/2 packet ranch seasoning
  • Kosher salt
  • Freshly ground black pepper
  • Ranch dressing, for drizzling
  • Chopped fresh chives, for garnish

 

Preheat grill to medium heat. In a large bowl, toss potatoes with olive oil, lemon juice, and ranch seasoning. Season it with salt and pepper.

 

Thread potatoes on skewers and grill until tender and lightly charred, 15 minutes.

 

Drizzle with ranch and garnish with chives.

 

HAWAIIAN SLIDERS WITH CILANTRO-LIME MAYO

 

  • 1 tbsp. olive oil
  • 1 garlic clove, minced
  • 1 1/2 c. barbecue sauce
  • 1/4 c. pineapple juice
  • 2 tsp. Worcestershire sauce
  • 1/2 tsp. chili powder
  • 1 rotisserie chicken, shredded
  • 1 c. fresh pineapple pieces
  • 1/2 red onion, thinly sliced
  • 2 c. shredded Monterey Jack cheese
  • 12 slider buns
  • 1 tbsp. butter, melted

 

For the cilantro-lime mayo:

 

  • 2/3 c. mayonnaise
  • Juice of 1 lime
  • 1 tbsp. freshly chopped cilantro
  • 1 garlic clove, minced
  • Kosher salt

 

In a medium saucepan over medium heat, heat oil. Add garlic and cook until fragrant, 1 minute. Add barbecue sauce, pineapple juice, Worcestershire sauce and chili powder. Whisk to combine and cook until thickened slightly 5 minutes. Add chicken to saucepan and toss to coat.

 

Make cilantro-lime mayo: in a medium bowl, whisk mayonnaise, lime juice, cilantro, and garlic. Season it with salt.

 

Preheat oven to 350° and place bottom half of slider buns on a large baking sheet.

 

Spread mayo mixture in an even layer on bottom buns. Top with an even layer of sauced chicken, pineapple pieces, cheese, and red onion. Top with top buns, brush with melted butter and garnish with reserved cilantro. Bake until buns are golden and cheese is melted -10 to 15 minutes.
