Who doesn’t love a good waffle? Falafel Waffles with Armenian Cucumber Slaw is liked by most people. The slaw is made from cucumbers, carrots, onions, and parsley combined with red wine vinegar and olive oil, all set atop a warm waffle made from a mix of chickpeas, eggs, onions, and garlic. If you can’t find this slightly sweeter cucumber (which is secretly a type of melon), substitute with English or Persian cucumber. This is one of my go-to summer dishes!
